What is HACCP software for restaurants?

It is a tool in which the team records its hygiene checks: temperature checks, cleaning, product traceability. The HACCP method helps prevent and identify hazards linked to food hygiene practices. In Enskel, each site keeps the history of its checks, and head office sees those that are missing, site by site.

What is the food safety management plan (PMS in France)?

The food safety management plan describes the measures a business takes to ensure the hygiene and safety of its food against biological, physical and chemical hazards. Mandatory for anyone who holds, prepares or distributes foodstuffs, it is written by the business itself, draws on the guides to good hygiene practice and includes HACCP procedures and traceability. See our PMS guide.

Which checks do your teams record in Enskel?

Temperatures, cleaning and product traceability. Checkpoints are defined with you at the start, site by site: what to check, where and when. Each site keeps its history, and head office sees, site by site, the checks done and those overdue.

Do digital checks replace the paper log?

What matters is being able to present, during an inspection, the records required by your food safety management plan: the French government site Service Public notably mentions temperature record sheets. Enskel helps your teams record their checks and keeps each site’s history. The plan, how it is written and what it requires to be recorded remain the business’s own.

What is the difference between a use-by date (DLC) and a best-before date (DDM)?

The use-by date (DLC), ‘use by…’, is binding: once it has passed, the product can no longer be sold. The best-before date (DDM), ‘best before…’, is for guidance only. In Enskel, the traceability points to record are defined with you at the start; date tracking is checked during the demo.

Does Enskel guarantee HACCP compliance?

No. Enskel helps your teams keep track of their checks and keep their records in one place; it doesn’t guarantee HACCP compliance. The procedures, the food safety management plan and the business’s obligations remain yours, as do the decisions to take when a check reveals a problem.

Is the HACCP module included in the pilot site?

No. The pilot site, free for three months, covers the other five modules: Forecasting, Stock, Recipe costing, Scheduling and Profitability. HACCP is a separate package, with its own price per site per month, shown on the Pricing page. HACCP checks are part of what the demo shows.
