01 / IN BRIEF

What it does. For every site, every service.

  1. Forecast every service

Lunch and dinner sales, by time slot and by product, for every site.

  2. Account for what changes

The weather, local events and each site’s calendar: day of the week, holidays, bank holidays.

  3. State its accuracy

Every forecast states how accurate it is (within 7%, for example); after the service, it is compared with what actually happened.

04 / THE METHOD

Method and limits.

What it calculates, what it needs, what it doesn’t do.

  1. How it calculates

It starts from your sales history, site by site, and puts it in context: day, weather, events. Before you rely on it, it is replayed on past weeks it has never seen, and must beat the usual rule of thumb: repeating last week’s figure.

  2. What it needs

The sales history of each site, with the products sold and the time of sale. Its depth and quality are checked with you before you start.

  3. Its limits

A forecast is still an estimate. An exceptional closure, an unavailable product or a menu change should be flagged in Enskel; your team keeps the final say.

What is restaurant sales forecasting software?

Restaurant sales forecasting software estimates in advance what each service will sell, in covers and product by product, so you can prepare orders, production and the staff rota. Enskel starts from your POS history, adds the weather, local events and each site’s calendar, and shows the margin of error of every forecast.

What data do we need to start?

The sales history of each site, with the products sold and the time of sale. The forecast is built on every sale your POS records, including kiosks, drive-thru and delivery if they go through it. Enskel adds local weather, nearby events and each site’s calendar. Before you start, we check the depth and quality of that history together.

Do we need to connect the POS?

Yes: the forecast is built on the sales your POS records. Popina is already connected. Your POS isn’t Popina? Tell us which one: we’ll look at the connection with you; the timing depends on its provider. The first forecasts arrive one week after access to your POS data. The data used is detailed on the page about POS systems connected to Enskel.

How far ahead does it forecast?

A service, a day or several days, depending on your ordering and prep lead times. Each forecast reads by time slot and product by product, for lunch as well as dinner: enough to place the morning supplier order, plan the bake or anticipate the 12:30 rush from Monday.

How accurate is the forecast?

Every forecast shows its margin of error, in other words how accurate it is; after the service, it is compared with what actually happened. Before you rely on it, the method is replayed on past weeks it has never seen and must beat last week’s figure. The guide explains how to measure the gap between the forecast and actual sales.

Does the forecast cover all our sites?

Yes. Each site has its own forecast, drawn from its own history, weather, events and calendar, with the same method for all. Head office sees them all, site by site; in the kitchen, the service forecast is shown on the pass tablet, and the manager finds the same screen on their phone.

What doesn’t the forecast do?

It doesn’t decide for your team, and it can’t guess what it can’t see. An exceptional closure, an unavailable product or a menu change should be flagged in Enskel. It passes its quantities to Stock and its footfall to Scheduling; your manager then confirms the orders and the rota.
